Venison Gyros

A taste of Greece with a Venison twist! Homemade flatbreads, fresh Tzatziki, zingy salad and succulent marinated meat. You really can't go wrong with this banger of a recipe! 

Ingredients

Venison

1 tbsp oregano 
1 tbsp Onion Granules
1/2 tbsp Sweet Paprika
1 tsp salt
1/2 tsp black pepper
2 tbsp Olive Oil
2 tbsp White Wine Vinegar 
 

Tzatiki

Tzatziki
1/2 cup finely grated cucumber
1 cup whole milk greek yog
1 tbspn fresh lemon
1/2 tbspn olive oil 
1 garlic clove, grated
1 tbspn chopped dill
1 tbspn chopped mint

Flatbreads

260g flour
1 tspn salt (dissolved in water)
160ml warm water
5 tablespoons oil or butter.

Salad

2 tomatoes
1 shallot or small white onion 2 tbspn chopped Parsley

Method

1. Make the Flat bread Dough
Combine the Flour, Warm water (with salt dissolved) and oil/butter. Mix and knead by hand for 8 minutes, or 5 minutes in a mixer with a dough hook. Place in bowl with a damp cloth draped over and leave to rest. This dough makes roughly 6-8 flat breads, depending on thickness. 

2. Prep the Meat
Thinly slice the loin across the grain and place in a bowl.
Add the oregano, onion granules, sweet paprika, salt, black pepper, olive oil and vinegar and mix together, set aside. 

3. Make the Salad
Slice the tomatoes and shallot, remove the tomato seeds if you want to reduce the water content (recommended), roughly chop the parsley and mix together in a bowl, set aside. 

4. Make the Tzatziki
Grate the cucumber and squeeze out excess liquid into a bowl. Finely chop (or mince) the garlic clove, finely chop the dill and mint. Combine with the Greek yogurt. Add the olive oil and lemon to taste. Set aside.

5. Cook the Flat breads
Set a frying pan on a high heat. Pinch off a golf ball size piece of dough and use your fingers to create a rough disk. Use a rolling pin to roll out the dough into a large circle, it doesn’t have to be perfect. When the dough is as thin as you can make it, transfer it into the hot pan and cook for 20 - 30 seconds on each side. Do not overcook as this will make the flat breads brittle. It may take a few to get the timings right. Stack them once cooked and cover with a cloth. Set aside. 

6. Cook the Meat
Using the same pan and the same heat setting, fry the marinated meat for roughly 3-5 minutes until cooked. 

7. Bring all your components together!
Spread the tzatziki on a flat bread, add some of the salad and the meat, wrap up and enjoy!
